DIY Sushi Party Menu – Revised meal version

This is probably for a group of 3-5:

  1. Spicy Salmon fillings for DIY Sushi / Donburi
  2. Tuna Mayo fillings for DIY Sushi / Donburi
  3. Japanese Curry with chicken wings, potatoes and carrots
  4. Tomato & Cucumber salad
  5. Jell-O

Seafood Mushroom Balls

One whole shitake mushroom, flip it over and remove the stem; Then place pre-prepared prawn blanched in milk , and small scallop (readily avail from supermarkets, cheap ones) on the mushroom and top off with a carrot pumpkin blended and puree mixture. Steam the stuffed mushroom whole and serve with sauced over it. (Sauce is made from 6 tbs or japanese soya, 1 tbs of stock and 1 tbs of mirin.)

Chilled Egg Salad Toast

Semi boiled eggs are used, where the yolk is still runny when the whites are in soft but still solid forms. For 5 eggs to cook in 1 pot of boiling water, 7 minutes is required. After boiling and removing the shells, the egg is cut and tossed with a little mayo. Chopped chives, salt & pepper and a dash of freshly squeezed lemon… mix it all up and serve topped on toast.

  1. Spicy or Cream Cheese Salmon Temaki / Genken Sushi
  2. Tuna Mayo Maki / Temaki / Genken Sushi
  3. Tamago Nigiri / Maki Sushi
  4. Teriyaki / Cola Chicken Thighs
  5. Tomato Cucumber salad
  6. Mochi Ice Cream
  7. Hot Tea (Not sure if can use Barley Tea)

New Ideas from TV

Some new ideas i got from watching tele and some brain twisting storm…

    1. ESKIMNO BAR

      This is basically a 2 in 1 combination of vanilla ice cream and brownie in  the form of a candy bar which is coated with an outer layer of chocolate. As on tele, this is served with a special caramel sauce, which i will have to figure out somehow…
    2. STUFFED BONELESS CHICKEN WING (Stuffed Chicken Wings)

      The concept of to debone the chicken wings without causing damage to the skin and flesh, so that it will hold some sorts of fillings; cheese mixture, mixed bell peppers… Typically, it sums up with deep frying to hold the stuffing together…
    3. CHURRO CHOCO

      Cinnamon sticks with thick hot chocolate that is almost fudge like; Anthony’s food tour show claims that this is a suppose to be a traditional breakfast delight in Italy! Sounds like a fab idea!

Signature Cafe Entry 01

I really dun have many signature dish that i am happy to do for ppl, and that each repetition is achieved with consistent in taste and presentations… SO, i have decided to keep a journal that, God permits, i will have a menu decent enough for my cafe…

1. Toufu Pie
Vegan soya dish, a protein replacement for the carbo conscious. The sweet and sour of tomato puree sauce is absorbed by the thirsty toufu, with a beautiful mozzarella cheese stringing from bite to teeth.

2. Tomato Fish Stew
A tangy creamed stew with fresh tomato bursting with every sip you take, in accompaniment with the fresh and non-flaky fish cubes that is still visible amidst the soup and not disintegrating as continues to stay warm or even reheating.

3. Green Presents
Little parcel greens, contains bite sized mixture of lightly seasoned lean minced meat with preserved vegetables. The outer greens wrap gives a nice clean presentation; whereas the minced mixture content is tender and flavorful, with a slight crunch by the preserved veggie piece.

4. Do and Toes
A twist on the classic potato salad, where you have the combination of sweet potatoes, rustic potatoes, avocado and tomatoes; giving you the brilliance of red, yellow and orange and green on the plate that attracts your sight and the tastings.

5. In A Bite
Its like a little playground when all comes to play; Be it the little cubed orange carrots or green peas, the yellow corn kernels or crushed brown nuts, they all come together to give you a pleasure roller coaster ride of textures.
